FLEXIBLE EDIBLE FLOWER PASTE

1) In a saucer prepare the mixture of

1 tablespoon of powdered sugar

2 tablespoons of cornstarch

Once prepared, set them aside.

2) In the mixer bowl, add :

20 g of cornstarch

6 g of pectin . If the pectin is dark in color, add a white food color

1 teaspoon of cmc or GUM tragacanth

1 tablespoon of powdered sugar

3) In another bowl melt

20 grams of fructose

1 teaspoon of glucose syrup

1 teaspoon of glycerol or food glycerin with 1 teaspoon of warm water

Then add 1 teaspoon of egg white

You can also use a classic electric mixer, gathering the ingredienti little until everything is blended and you obtain smoothdought. Then take it out and add the mixture you had put aside in the saucer.

Start kneading until all ingredients are completely absorbed.
